Oolong tea timer
Three minutes at around 195F or 90C suits most oolongs. They sit between green and black in oxidation, so they take hotter water than a green without turning bitter as fast as one would.
Oolong is the tea that rewards re-steeping more than any other. A rolled oolong opens gradually, and the third or fourth infusion is often the one people like best. Add about 30 seconds each time and expect five or six from good leaf.
If it comes out thin, the leaf probably had not opened yet rather than the steep being short. Give the first infusion an extra minute and start counting from the second.
