Green tea timer

Two minutes at around 175F or 80C is a safe steep for most green teas. Some Japanese senchas want less, closer to 90 seconds.

Green tea is far less forgiving than black. It has more catechins available early, and boiling water pulls them out fast, which is where the flat bitter taste comes from. If your green tea usually tastes bitter, the water was probably too hot rather than the steep too long.

Good leaf will take a second and third infusion. Add roughly 30 seconds each time.
