French press timer

Four minutes is the standard steep, counted from when the water hits the grounds. It suits a coarse grind and water just off the boil, around 200F or 93C.

Longer is not stronger in the way people expect. After about five minutes you are mostly extracting the bitter compounds that come out last, so the cup gets harsher rather than deeper. If it tastes weak, use more coffee rather than more time.

Break the crust and skim the foam before you plunge, and press slowly. Most of the sludge people dislike in a French press comes from forcing the plunger down fast and stirring the grounds back into the cup.
