Twenty five to thirty seconds from the moment the pump starts is the usual target for a double shot. The time is not the goal in itself: it is a proxy for whether the grind is right.

Running fast, under about 20 seconds, means the grind is too coarse and the water is finding channels through the puck. Running slow, past 35, means it is too fine and you are pulling bitterness. Adjust the grinder, not the timer.

Weigh the output if you can. Roughly double the dry dose is the conventional ratio, and the clock plus the scale together tell you more than either does alone.
