Black tea timer

Four minutes at full boil is the common steep for black tea. Three gives you a lighter cup, five a stronger and more astringent one.

The trade-off is tannins. They arrive later than the caffeine, so a longer steep gets you a drier, more puckering cup without much more of a lift. If you want more caffeine, use more leaf.

Milk softens tannin, which is part of why a builder-strength brew and milk go together and why a delicate first-flush Darjeeling usually does not want either.
